Ingredients
  

For the Chicken

  • 4 pieces boneless, skinless chicken breasts (about 1.5 pounds)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

For the Gravy

  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste

For the Mashed Potatoes

  • 2 pounds russet potatoes, peeled and cubed
  • 1/2 cup milk (whole or low-fat)
  • 1/4 cup butter
  • Salt and pepper to taste

Instructions
 

Preparation of Chicken

  • Season both sides of your chicken breasts with salt, pepper, garlic powder, and onion powder.
  • In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes on each side until golden brown and cooked through. Make sure the internal temperature reaches 165°F. Once done, remove from skillet and set aside.

Making the Gravy

  • In the same skillet, add butter over medium heat. Once melted, whisk in the flour, stirring constantly for about 2 minutes until it turns light brown.
  • Gradually add the chicken broth while whisking to avoid lumps. Continue whisking until the mixture thickens, about 4-5 minutes.
  • Stir in Worcestershire sauce, dried thyme, salt, and pepper. Let it simmer for another couple of minutes, then remove from heat.

Making the Mashed Potatoes

  • In a large pot, add cubed potatoes and cover with cold water. Bring to a boil and cook until fork-tender, about 15-20 minutes.
  • Drain the potatoes and return them to the pot. Add milk, butter, salt, and pepper. Mash until smooth and creamy, ensuring no lumps remain.

Assembly of Dish

  • To plate, scoop a generous portion of mashed potatoes onto each plate. Top with a chicken breast and ladle a generous amount of gravy over the chicken and potatoes.
