Ingredients
  

For the Chicken

  • 1 lb 1 lb (450g) boneless, skinless chicken thighs
  • 1 tsp 1 tsp garlic powder
  • 1 tsp 1 tsp chili powder
  • 1/2 tsp 1/2 tsp cumin
  • 1/2 tsp 1/2 tsp paprika
  • 1/2 tsp 1/2 tsp salt
  • 1/4 tsp 1/4 tsp black pepper
  • 1 tbsp 1 tbsp olive oil

For the Tacos

  • 8 large 8 large cabbage leaves
  • 1 cup 1 cup shredded carrots
  • 1/2 cup 1/2 cup diced red onion
  • 1 1 ripe avocado, sliced
  • 1/2 cup 1/2 cup fresh cilantro, chopped
  • Lime wedges, for serving

For the Sauce

  • 1/2 cup 1/2 cup Greek yogurt
  • 1 tbsp 1 tbsp lime juice
  • 1 tsp 1 tsp honey (optional)
  • Salt and pepper to taste

Instructions
 

Preparation

  • Rinse the chicken thighs under cold water and pat them dry with paper towels. Make sure they are completely dried to achieve maximum crispiness.
  • In a small bowl, combine the garlic powder, chili powder, cumin, paprika, salt, and black pepper.
  • Rub the spice mixture evenly over the chicken thighs, ensuring they are well coated.
  • Heat the olive oil in a large skillet over medium-high heat. Once the oil is hot, add the chicken thighs to the skillet.

Cooking Chicken

  • Sear the chicken for about 5-7 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F or 75°C).
  • Remove the chicken from the skillet and place on a cutting board. Allow it to rest for a few minutes before slicing into bite-sized pieces.

Preparing Sauce

  • In a small bowl, whisk together the Greek yogurt, lime juice, honey (if using), salt, and pepper until smooth and creamy. Taste and adjust seasoning as necessary.

Assembling Tacos

  • Take a large cabbage leaf and place a generous serving of sliced chicken in the center.
  • Top with shredded carrots, diced red onion, and avocado slices.
  • Drizzle with the prepared sauce and sprinkle with fresh cilantro.

Serving

  • Serve each taco with lime wedges on the side, allowing everyone to squeeze fresh lime juice over their tacos for an extra zesty kick.
