Ingredients
  

  • 1 pound chicken tenders
  • 1 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper (optional)
  • 2 large eggs
  • 1/4 cup buttermilk
  • Vegetable oil for frying

Instructions
 

  • Set up a breading station: whisk eggs and buttermilk in one bowl; combine flour, garlic powder, paprika, salt, black pepper, onion powder, and cayenne pepper in another.
  • Dip each tender into the egg mixture, shaking off excess, then coat thoroughly with the flour mixture.
  • Heat 1/2-inch of vegetable oil in a skillet over medium-high heat until shimmering (test with a pinch of flour: sizzle = ready).
  • Fry tenders in batches, 8–10 minutes total, turning occasionally, until golden brown and juices run clear.
  • Place cooked tenders on a paper towel-lined plate to drain. Repeat with remaining tenders.

Notes

Ensure oil temperature for crispy results.
Buttermilk prevents dryness and enhances flavor.
Double-coat for extra crunch.
Use a thermometer: internal temperature must reach 165°F (74°C).
Keep warm in a 200°F oven while finishing remaining batches.
For gluten-free, substitute almond flour for all-purpose flour and omit buttermilk if necessary.
