  • 1 cup Cherry tomatoes Halved.
  • 1 medium Cucumber Diced.
  • 1/2 medium Red onion Sliced.
  • 1 medium Avocado Diced, ripe for best texture.
  • 1 medium Jalapeño Finely chopped, seeds removed for less heat.
  • 2 tablespoons Olive oil Extra virgin for best flavor.
  • 2 tablespoons Lime juice Freshly squeezed.
  • 1 teaspoon Salt Adjust to taste.
  • 1/2 teaspoon Black pepper Adjust to taste.

Spicy Ranch Dressing

  • 1 packet Ranch dressing mix Choose your favorite brand.
  • 1/2 cup Mayonnaise Regular or light.
  • 1/2 cup Sour cream Regular or light.
  • to taste Hot sauce Adjust for desired spice level.

Instructions
 

Preparation

  • In a large bowl, combine mixed greens, halved cherry tomatoes, diced cucumber, sliced red onion, and diced avocado.
  • Finely chop the jalapeño (remove seeds for less heat) and add it to the salad.

Dressing

  • In a separate small bowl, mix ranch dressing mix with mayonnaise, sour cream, and a few dashes of hot sauce to taste for the spicy ranch dressing.

Final Assembly

  • Drizzle olive oil and lime juice over the salad, season with salt and pepper, and toss to combine.
  • Serve with the spicy ranch dressing on the side or drizzled on top.

Notes

Serve as a refreshing side dish with grilled chicken, fish, or tacos. Best when dressing is added just before eating to keep greens fresh. Use ripe avocados for best creaminess.
