  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes, undrained
  • 2 cups chicken broth
  • 2 tablespoons Cajun seasoning
  • 1 cup frozen peas (optional) Optional for added color and flavor

Cooking Steps

  • Heat oil in a large pot over medium heat.
  • Add chicken and cook until browned on all sides.
  • Add onion, bell pepper, and garlic; sauté until softened.
  • Stir in diced tomatoes, rice, chicken broth, Cajun seasoning, and salt and pepper.
  • Bring to a boil, then reduce heat, cover, and simmer for about 20 minutes or until rice is tender.
  • Stir in frozen peas, cover, and cook for an additional 5 minutes.
  • Fluff with a fork and serve warm.

Notes

Garnish with fresh herbs like parsley or green onions. This dish pairs well with a side salad or crusty bread. Store leftovers in an airtight container in the fridge for up to 3 days, or freeze for up to 2 months.
