  • 2 cups cooked rice Any type of rice can be used.
  • 2 pieces cooked chicken breasts, sliced Leftover or rotisserie chicken can be used.
  • 1 cup steamed broccoli Fresh or frozen can be used.
  • 1/2 cup shredded carrots Optional; can be substituted with other veggies.
  • 1/4 cup soy sauce Use tamari for gluten-free version.
  • 1 tablespoon sesame oil Adds flavor; can substitute with olive oil if desired.
  • 2 pieces green onions, sliced For garnish and flavor.
  • to taste sesame seeds For garnish.

Instructions
 

Assembly

  • In a large bowl, layer the cooked rice at the bottom.
  • Arrange the sliced chicken breasts on top of the rice.
  • Add steamed broccoli and shredded carrots around the chicken.
  • Drizzle with soy sauce and sesame oil.
  • Sprinkle sliced green onions and sesame seeds on top.
  • Serve warm and enjoy.

Notes

Serve with additional soy sauce or sesame oil for extra flavor. Pairs well with sliced avocado or a side salad. Leftovers can be stored in an airtight container for 3 to 4 days.
