Preparation

  • In a large pot over medium heat, sauté the onion, carrots, and celery until soft.
  • Add the garlic and ground chicken, cooking until the chicken is browned.
  • Stir in the diced tomatoes, chicken broth, and Italian seasoning.
  • Bring to a simmer and cook for 20 minutes.
  • Stir in the heavy cream, then season with salt and pepper.
  • Serve hot, garnished with fresh basil.

Notes

For added flavor, sauté the garlic for a minute before adding ground chicken. You can adjust the vegetables based on availability. To make it heartier, add potatoes or mushrooms. Ground turkey can be used for a healthy twist.
