Main Ingredients

  • 4 cups rotisserie chicken, shredded Use leftover rotisserie chicken to save time.
  • 1 bag Doritos (cheesy flavor) Feel free to use other types of chips.
  • 8 oz cream cheese, softened
  • 1 can corn, drained
  • 2 cups shredded cheddar cheese
  • 1 can cream of chicken soup Can be substituted with vegetable soup for a vegetarian version.
  • 1/2 cup milk

Optional Toppings

  • crumbled Doritos
  • chopped green onions

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large mixing bowl, combine shredded rotisserie chicken, cream cheese, corn, cream of chicken soup, and milk. Mix until well combined.

Assembly

  • In a greased casserole dish, layer half of the Doritos at the bottom.
  • Pour the chicken mixture over the Doritos layer.
  • Top with the remaining Doritos and sprinkle shredded cheddar cheese on top.

Baking

  • Bake in the preheated oven for 25-30 minutes or until the cheese is bubbly and golden brown.
  • If desired, add optional toppings before serving.

Notes

Serve warm straight from the oven, goes well with a side of salad or favorite dipping sauces. Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the microwave or oven until warmed through. For an extra kick, add some jalapeños to your chicken mixture.
