Ingredients
  

Crust

  • 1.5 cups graham cracker crumbs
  • 0.5 cups unsalted butter, melted

Filling

  • 1 cups granulated sugar
  • 3 packages (8 ounce) cream cheese, softened
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1.5 cups diced apples (peeled and cored) Use a mix of tart and sweet apples for best flavor.
  • 1 teaspoon cinnamon
  • 0.5 cups caramel sauce For drizzling on top before serving.

Preparation

  • Preheat the oven to 325°F (165°C).
  • In a medium bowl, mix the graham cracker crumbs and melted butter until well combined. Press the mixture into the bottom of a 9-inch springform pan.
  • In a large bowl, beat the cream cheese with sugar and vanilla until smooth.
  • Add the eggs one at a time, mixing well after each addition.
  • Fold in the diced apples and cinnamon.
  • Pour the cheesecake mixture over the crust in the springform pan.

Baking

  • Bake for 60–70 minutes, or until the center is set and only slightly jiggly.
  • Allow to cool, then refrigerate for at least 4 hours.

Serving

  • Drizzle caramel sauce over the top before serving.
  • Serve chilled, cut into slices, and enjoy with additional caramel sauce or whipped cream.

Notes

Make sure the cream cheese is at room temperature for easy mixing. Don't overbake the cheesecake; it should still be a bit jiggly in the center when you take it out of the oven.
