Ingredients
  

Main Ingredients

  • 2 cups shredded cooked chicken Use rotisserie chicken for convenience.
  • 1 cup enchilada sauce You can substitute with taco sauce if needed.
  • 1 cup shredded cheese (cheddar or Mexican blend) Consider trying pepper jack for a spicier kick.
  • 12 pieces slider buns Soft slider buns work best.
  • 1/2 cup diced onion Red onion can add more color.
  • 1/4 cup sliced jalapeños Optional for added heat.

Additional Ingredients

  • 1 tablespoon olive oil For brushing the tops of the buns.
  • to taste Salt and pepper Season according to preference.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, combine shredded chicken, enchilada sauce, cheese, onion, jalapeños, salt, and pepper. Mix well.
  • Slice the slider buns in half and place the bottom halves in a baking dish.
  • Spoon the chicken mixture generously over the buns.
  • Place the top halves of the buns on top of the chicken mixture.
  • Brush the tops of the buns with olive oil.

Baking

  • Bake in the preheated oven for about 20-25 minutes, or until the cheese is melted and the tops are golden.
  • Serve warm and enjoy!

Notes

Serve with a side of salsa, guacamole, or sour cream for dipping. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven to maintain crispness.
