Cherry Amaretto Tiramisu

Ingredients
  

For the creamy filling

  • 2 cups mascarpone cheese Ensure it is at room temperature for better mixing.
  • 1 cup heavy cream
  • 1/2 cup amaretto liqueur Can be omitted for a non-alcoholic version.
  • 1/2 cup cherry juice Adjust based on taste preference.
  • 1 cup fresh cherries, pitted and chopped
  • 1/4 cup granulated sugar
  • 2 tablespoons cherry preserves
  • 1 teaspoon vanilla extract

For layering

  • 1 package ladyfingers Quickly dip in liquid to avoid sogginess.
  • 1/4 cup cocoa powder For dusting on top.
  • 1/4 cup dark chocolate, shaved or grated

Instructions
 

Preparation

  • In a large mixing bowl, combine the mascarpone cheese and heavy cream.
  • Beat the mixture on medium speed until it is smooth and fluffy, about 2-3 minutes.
  • Add amaretto liqueur, cherry juice, and vanilla extract. Beat for another 1-2 minutes until well combined.
  • In a separate small bowl, mix granulated sugar and cherry preserves. Add to the mascarpone mixture and beat for an additional minute.
  • Gently stir in the chopped fresh cherries until evenly distributed.

Assembly

  • In a shallow dish, pour the amaretto liqueur and cherry juice mixture.
  • Quickly dip each ladyfinger into the liquid mixture, ensuring not to soak them.
  • Arrange a layer of dipped ladyfingers in the bottom of a 9x13 inch baking dish.
  • Spread half of the mascarpone cherry mixture over the ladyfingers.
  • Add another layer of dipped ladyfingers on top.
  • Spread the remaining mascarpone cherry mixture evenly over the second layer of ladyfingers.

Chill and Serve

  • Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
  • Before serving, dust the top with cocoa powder and sprinkle shaved dark chocolate.
  • Serve chilled with optional fresh cherries or whipped cream.

Notes

To store, cover tightly and keep in the refrigerator for up to 3-4 days. Best enjoyed within the first couple of days.
