Strawberries and Cream Dream Layer Cheesecake Cake

Ingredients
  

Cheesecake Filling

  • 24 ounces cream cheese, softened Make sure the cream cheese is at room temperature.
  • 1 cup granulated sugar
  • 1 tablespoon lemon juice
  • 2 cups heavy cream Whip until stiff peaks form.
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups fresh strawberries, sliced

Crust

  • 1 package graham cracker crumbs
  • 1/2 cup unsalted butter, melted Mix with graham cracker crumbs.

Instructions
 

Preparation

  • Preheat the oven to 325°F (163°C). Grease and line a springform pan with parchment paper.
  • In a large mixing bowl, beat the softened cream cheese with granulated sugar and lemon juice until smooth.
  • In another bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form. Fold the whipped cream into the cream cheese mixture.
  • For the crust, mix the graham cracker crumbs with melted butter and press into the bottom of the prepared pan.

Assembly

  • Pour half of the cheesecake mixture over the crust, level it, and layer half of the sliced strawberries on top.
  • Pour the remaining cheesecake mixture over the strawberries, level again, and then add another layer of sliced strawberries on top.
  • Refrigerate for at least 4 hours or until set.
  • Remove from the springform pan, slice, and serve chilled.

Notes

Serve chilled. You can garnish each slice with extra strawberries or a drizzle of chocolate sauce for an extra touch. Store any leftovers in an airtight container in the refrigerator for about 3 to 5 days.
