Ingredients
  

Beef and Aromatics

  • 2 pounds beef stew meat, cut into bite-sized chunks
  • 2 tablespoons olive oil For searing the beef
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced

Vegetables

  • 4 carrots, peeled and sliced
  • 4 potatoes, peeled and diced
  • 2 stalks celery, chopped
  • 1 cup frozen peas Add 20 minutes before serving

Liquids and Seasonings

  • 4 cups beef broth
  • 1 cup red wine For deglazing
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions
 

Preparation

  • Heat the olive oil in a large pot over medium-high heat.
  • Add the beef stew meat and sear until browned on all sides.
  • Add chopped onions and minced garlic, sauté until soft and fragrant.

Cooking

  • Toss in the carrots, potatoes, and celery. Stir and cook until they begin to soften.
  • Pour in the red wine and scrape up the brown bits from the bottom of the pot.
  • Add the beef broth, tomato paste, dried thyme, bay leaves, salt and pepper.
  • Cover and let simmer on low heat for at least 2 hours.
  • About 20 minutes before serving, add the frozen peas and stir.

Notes

Serve hot, garnished with fresh parsley. Pairs well with crusty baguette or mashed potatoes.
