  • 4 medium Russet or Yukon Gold potatoes Starchy potatoes for crispiness.

  • 1 teaspoon black pepper Adjust to taste.

Preparation

  • Peel the potatoes and slice them into uniform, thin rounds for even cooking.
  • Slice the onions thinly or dice them if preferred.
  • Rinse the potato slices in cold water to remove excess starch, and pat them dry with paper towels.

Cooking

  • Preheat a large skillet over medium-high heat and add enough oil to coat the bottom of the pan.
  • Lay the potato slices in a single layer in the hot pan, season with salt and pepper, and cook until golden brown and crispy, about 5-7 minutes per side.
  • Once the potatoes are crispy, add the sliced onions to the pan and continue cooking, stirring occasionally, until they are translucent and caramelized.

Serving

  • Transfer the fried potatoes and onions to a plate lined with paper towels to remove excess oil and serve immediately.

Notes

For best results, use a non-stick skillet to prevent sticking and avoid overcrowding the pan. Experiment with additional seasonings like fresh herbs for extra flavor.
