Potato Layers

  • 4 cups thinly sliced potatoes

Cheese Sauce

  • 3 tablespoons butter For making the cheese sauce.
  • 3 tablespoons flour To thicken the sauce.
  • 1.5 cups milk Cold milk helps make a smooth sauce.
  • 1 teaspoon salt
  • 1 dash cayenne pepper For a hint of spice.
  • 1 cup grated sharp cheddar cheese
  • 0.5 cup grated cheese (for sprinkling on top) For a cheesy topping.

Instructions
 

Preparing the Cheese Sauce

  • In a small saucepan, melt the butter over low heat.
  • Once melted, blend in the flour, and let it sit for a minute.
  • Gradually add the cold milk, stirring continuously with a whisk to avoid lumps.
  • Season the sauce with salt and a dash of cayenne pepper.
  • Continue to cook the sauce over low heat until it becomes smooth and begins to boil.
  • Stir occasionally with a whisk.
  • Once the sauce is smooth and reaches a boiling point, reduce the heat and stir in the grated sharp cheddar cheese until fully incorporated.

Assembling the Dish

  • Take a lightly greased one-quart casserole dish.
  • Place half of the thinly sliced potatoes in the bottom of the casserole dish.
  • Pour half of the prepared cheese sauce over the first layer of potatoes.
  • Repeat the layering process with the remaining potatoes and the rest of the cheese sauce.
  • Sprinkle the remaining 1/2 cup of grated cheese on top of the dish.
  • For added visual appeal, sprinkle some paprika for color.

Baking the Scalloped Potatoes

  • Bake the assembled dish uncovered for about 1 hour at 350°F (175°C).
  • The scalloped potatoes are ready when the top is golden brown, and the potatoes are tender when pierced with a fork.
