Ingredients
  

For the Carne Guisada

  • 2 pounds beef stew meat, cubed
  • 1/4 cup all-purpose flour
  • 2 tablespoons vegetable oil for browning meat
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can (14 oz) diced tomatoes
  • 2 cups beef broth
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • Salt and black pepper, to taste
  • Fresh cilantro for garnish (optional)

For the Flour Tortillas

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 2 tablespoons vegetable oil
  • 3/4 cup warm water

Instructions
 

Preparation

  • In a bowl, combine the cubed beef stew meat with the all-purpose flour, salt, and black pepper, ensuring the meat is well coated.
  • In a large pot or Dutch oven, heat the vegetable oil over medium-high heat.
  • Add the floured beef and brown it on all sides. Once browned, remove the beef from the pot and set it aside.

Sauté the Aromatics

  • In the same pot, add the chopped onion, minced garlic, and bell pepper. Sauté until they become soft and fragrant.
  • Return the browned beef to the pot.

Add the Tomatoes and Spices

  • Stir in the diced tomatoes, beef broth, ground cumin, chili powder, paprika, salt, and black pepper.
  • Bring the mixture to a boil, then reduce the heat to a simmer.

Simmer the Stew

  • Cover the pot and let the Carne Guisada simmer for about 1.5 to 2 hours, or until the beef is tender and the flavors have melded.
  • Check and adjust the seasoning as needed during the simmering process.

Prepare the Flour Tortillas

  • In a bowl, combine the all-purpose flour and salt.
  • Add the vegetable oil and warm water, mixing until a dough forms.
  • Divide the dough into small balls, about the size of golf balls.
  • Roll each ball into a thin circle, then cook them on a hot, dry skillet until they puff up and have golden spots.

Serve and Enjoy

  • Serve your Carne Guisada with warm flour tortillas.
  • Garnish with fresh cilantro, if desired.
