Ingredients
  

For the Bread

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 cup fresh cranberries
  • 1 each zest of one orange
  • 0.5 cup fresh orange juice
  • 2 large eggs
  • 0.5 cup unsalted butter, melted
  • 1 teaspoon pure vanilla extract

For the Glaze

  • 1 cup powdered sugar
  • 2-3 tablespoons fresh orange juice

Instructions
 

Making the Bread

  • Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
  • In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt.
  • Gently fold in the fresh cranberries and orange zest.
  • In another bowl, whisk together the orange juice, eggs, melted butter, and vanilla extract.
  • Pour the wet mixture into the dry ingredients and stir until just combined; do not overmix.
  • Pour the batter into the prepared loaf pan.
  • Bake in the preheated oven for 55-60 minutes or until a toothpick inserted into the center comes out clean.

Preparing the Glaze

  • In a small bowl, whisk together the powdered sugar and 2-3 tablespoons of fresh orange juice until smooth.
  • Once the bread has cooled for a few minutes, drizzle the glaze over the top and allow it to set for about 10 minutes.

Notes

Use fresh cranberries for a burst of tartness and color. If using frozen cranberries, do not thaw them before adding to the batter. Zest the orange before juicing it for ease. If the top of the bread browns too quickly while baking, tent it with aluminum foil.
