Preparation

  • Start by generously seasoning the T-bone steak with salt on both sides. Leave the seasoned steak at room temperature for about 45 minutes.
  • While the steak is resting, preheat your oven to 225 degrees Fahrenheit.
  • After 45 minutes, sprinkle black pepper on both sides of the T-Bone steak.
  • Transfer the peppered T-Bone steak to a lightly-oiled baking sheet.

Cooking

  • Place the baking sheet with the T-Bone steak on the middle rack in the preheated oven and let it cook for 30-60 minutes.
  • Use a meat thermometer to monitor the internal temperature: for rare aim for 120°F; medium-rare target 130°F; medium aim for 140°F.
  • Preheat a skillet with a drizzle of olive oil over high heat.
  • Sear the T-Bone steak for 3-4 minutes on each side.

Finishing Touches

  • Remove the steak from the skillet and tent it with foil to rest for 5-10 minutes.
  • After resting, slice your T-Bone steak and serve it as desired.
