  • 2 2 celery stalks, sliced
  • 1 1 onion, chopped
  • 3 cloves 3 cloves of garlic, minced
  • 2 leaves 2 bay leaves
  • 1 teaspoon 1 teaspoon of dried thyme
  • 8 ounces 8 ounces of wide egg noodles
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions
 

Preparation

  • In a large pot, add chicken breasts, chicken broth, water, carrots, celery, onion, garlic, bay leaves, dried thyme, salt, and black pepper.
  • Bring the mixture to a boil over medium-high heat.
  • Once it starts boiling, reduce the heat to low, cover the pot, and let it simmer for about 20 minutes or until the chicken is cooked through.
  • Remove the chicken breasts from the pot and shred them into bite-sized pieces using two forks.
  • While the chicken is being shredded, add the wide egg noodles to the pot and cook according to package instructions, typically around 7-8 minutes, until they are tender.

Serving

  • Return the shredded chicken to the pot and let it warm through for a few minutes.
  • Adjust the seasoning with salt and black pepper as needed.
  • Remove the bay leaves from the pot.
  • Ladle the Chicken Noodle Soup into bowls and garnish with freshly chopped parsley.
  • Serve hot and savor the comforting goodness.
