  • 4 large large russet potatoes
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1/4 cup crispy bacon bits
  • 1/4 cup diced fresh tomatoes

Preparation

  • Preheat your oven to 400°F (200°C). Wash and scrub the russet potatoes to remove any dirt or debris.
  • Dry the potatoes with a clean towel and prick them several times with a fork.

Season and Bake

  • In a large mixing bowl, drizzle the potatoes with olive oil and sprinkle the Cajun seasoning evenly over them.
  • Lay the seasoned potatoes on a baking sheet and bake in the preheated oven for 45-60 minutes, or until tender.

Load Up the Potatoes

  • Remove the potatoes from the oven and slice open each potato to create a pocket for toppings.
  • Sprinkle a generous amount of shredded cheddar cheese inside each potato.

Add the Finishing Touches

  • Top each potato with sour cream, chopped green onions, crispy bacon bits, and diced fresh tomatoes.
