Ingredients
  

Cookie Base

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Add-ins

  • 2 cups old-fashioned rolled oats
  • 1 cup shredded coconut
  • 1 cup semi-sweet chocolate chips
  • 1 cup chopped pecans or walnuts (or a mix of both)

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or grease them.
  • In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy.
  • Add the eggs and vanilla extract to the mixture, continuing to beat until well combined.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until a smooth dough forms.
  • Stir in the rolled oats, shredded coconut, chocolate chips, and chopped nuts.

Baking

  • Drop tablespoonfuls of cookie dough onto the prepared baking sheets, spacing them a few inches apart.
  • Bake for approximately 10-12 minutes or until the edges are golden but the centers are still soft.
  • Remove from the oven and let the cookies cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.
