Preparation

  • After grating the potatoes, squeeze out excess moisture by placing them in a clean kitchen towel and wringing it over a bowl.
  • In a large mixing bowl, combine the grated potatoes, finely grated onion, beaten eggs, flour, salt, and black pepper. Mix until well combined.

Cooking

  • Heat vegetable oil in a frying pan over medium-high heat. The oil should be around 1/4-inch deep.
  • Using a large spoon, scoop a portion of the potato mixture and gently flatten it before carefully placing it in the hot oil. Fry multiple fritters, but avoid overcrowding the pan.
  • Fry the fritters for about 3-4 minutes on each side, or until they are golden brown and crispy.
  • Remove the fritters from the oil and place them on paper towels to drain any excess oil.
  • Serve the grated potato fritters hot, with sour cream, applesauce, or your favorite dipping sauce.

Notes

Ensure the grated potatoes are as dry as possible to achieve crispy fritters. Taste the mixture before adding more salt, and feel free to experiment with seasonings and spices like garlic powder, paprika, or chives for extra flavor.
