Ingredients
  

For the stew

  • 2 pounds beef stew meat Cut into bite-sized chunks
  • 4 large potatoes Diced
  • 3 medium carrots Sliced
  • 2 medium onions Chopped
  • 4 cups beef broth As a flavorful base
  • 2 teaspoons thyme Dried or fresh
  • 2 each bay leaves To add depth of flavor
  • 1 teaspoon black pepper To taste
  • 1 cup Guinness Stout Optional, for added flavor

Instructions
 

Preparation

  • Cut the beef stew meat into bite-sized chunks, removing any excess fat.
  • Dice the potatoes, slice the carrots, and finely chop the onions. Keep them ready for cooking.

Searing

  • In a large, heavy-bottomed pot, sear the beef chunks until browned on all sides to lock in the flavor.

Simmering

  • Add the diced potatoes, sliced carrots, and chopped onions to the pot with the seared meat.
  • Pour in the beef broth until it covers the ingredients.
  • Add the bay leaves, thyme, black pepper, and, if chosen, a splash of Guinness Stout. Simmer gently until meat and vegetables are tender and the stew is rich.

Serving

  • Remove the bay leaves before serving.
  • Ladle the stew into bowls and serve hot with crusty bread on the side.

Notes

Sear the beef for richer flavor, use low and slow cooking for tender meat. Adjust seasoning to taste.
