For the Beef Roast

  • 3 pounds top-quality beef roast Use a high-quality cut for the best results.
  • 2 tablespoons olive oil For searing the beef.
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika

For the Gravy

  • 2 cups beef broth
  • 1/4 cup all-purpose flour For thickening the gravy.
  • 1/4 cup butter For making the roux.
  • to taste salt and pepper For seasoning the gravy.

For the Vegetables

  • 4 large potatoes, peeled and quartered
  • 4 large carrots, peeled and cut into chunks
  • 2 large onions, quartered
  • 4 cloves garlic, minced

Instructions
 

Preparing the Beef Roast

  • Preheat your oven to 350°F (175°C).
  • Season the beef roast with salt, black pepper, garlic powder, onion powder, and paprika, ensuring the seasoning covers the entire surface evenly.
  • In a large oven-proof pan, heat the olive oil over medium-high heat. Sear the beef roast on all sides until it forms a golden-brown crust.
  • Remove the beef roast from the pan and set it aside.
  • In the same pan, add the minced garlic and sauté for a minute.
  • Return the beef roast to the pan, add the potatoes, carrots, onions, and other preferred vegetables.
  • Pour in the beef broth, cover the pan, and transfer it to the preheated oven. Roast for approximately 2.5 to 3 hours, or until the beef is tender and the vegetables are soft.

Crafting the Perfect Gravy

  • While the beef roast is cooking, melt the butter in a separate saucepan over medium heat.
  • Add the all-purpose flour and whisk continuously until the mixture turns a light golden color.
  • Gradually pour in the beef broth, stirring constantly until the gravy thickens. Season with salt and pepper to taste.

Serving the Perfect Beef Roast

  • Once the beef roast is tender, remove it from the oven and let it rest for 10-15 minutes before carving.
  • Serve the beef roast with the roasted vegetables and the homemade gravy. Garnish with fresh herbs if desired.

Notes

Letting the roast rest after cooking helps to retain the juices. Adjust the seasoning of the gravy to your liking.
