Ingredients
  

For the Chili

  • 1 pound ground beef
  • 1 pound ground pork
  • 1 large onion, chopped
  • 1 medium green bell pepper, chopped
  • 2 cloves garlic, minced
  • 2 cans (14 ounces each) diced tomatoes
  • 1 can (6 ounces) tomato paste
  • 2 cans (15 ounces each) kidney beans, drained and rinsed
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper adjust to taste
  • to taste salt and black pepper
  • 2 cups beef broth
  • 2 tablespoons vegetable oil

For Garnish

  • shredded cheddar cheese
  • chopped green onions
  • sour cream

Instructions
 

Preparation

  • In a large, heavy-bottomed pot, heat the vegetable oil over medium-high heat.
  • Add the chopped onions, green bell pepper, and minced garlic to the pot. Sauté until they become soft and fragrant, about 5 minutes.
  • Add the ground beef and ground pork to the pot. Cook, breaking the meat apart with a spoon, until browned and cooked through. Drain any excess fat.
  • Stir in the diced tomatoes, tomato paste, and kidney beans.
  • Season the mixture with chili powder, ground cumin, paprika, cayenne pepper, salt, and black pepper. Adjust seasoning to taste.
  • Pour in the beef broth and stir to combine all the ingredients.
  • Reduce the heat to low, cover the pot, and let the chili simmer for about 1 hour, stirring occasionally.

Serving

  • Once the chili is thick and flavorful, ladle it into bowls.
  • Garnish with shredded cheddar cheese, chopped green onions, and a dollop of sour cream.
