Preparation

  • Season pork chops with salt, pepper, and garlic powder on both sides.
  • Heat vegetable oil in a large skillet over medium-high heat. Brown the pork chops on both sides.

Making the Gravy

  • Remove pork chops from the skillet and set aside.
  • In the same skillet, add thinly sliced onions and cook until soft and golden brown.
  • Sprinkle flour over onions and stir to create a roux, cooking until a deep brown color is achieved.
  • Gradually pour in beef broth while stirring constantly to thicken the gravy.
  • Return pork chops to the skillet and let them simmer in the gravy for 30-40 minutes until tender.

Serving

  • Serve Smothered Pork Chops over fluffy white rice, ladling the gravy on top.
  • Garnish with fresh chopped parsley.

Notes

Patience is key; the longer you simmer, the more tender your pork chops will become. Customize gravy with additional seasonings like thyme, paprika, or hot sauce for a spicier twist. Can substitute pork with seitan or tempeh for a vegetarian version.
