  • 1 pound ground beef
  • 1 onion, chopped
  • 1 packet taco seasoning
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 1 can (15 ounces) diced tomatoes, drained
  • 1 bag (11 ounces) nacho cheese chips, crushed
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream for serving
  • 1 cup salsa for serving
  • Fresh cilantro and jalapeño slices for garnish (optional)

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, cook the ground beef and onion until the meat is browned, and the onion is tender. Drain excess fat.
  • Stir in the taco seasoning, beans, corn, and diced tomatoes. Simmer for about 5 minutes.

Layering

  • In a 9×13-inch baking dish, start by spreading half of the crushed nacho cheese chips as the base layer.
  • On top of the chips, add half of the beef and veggie mixture.
  • Sprinkle one cup of cheddar cheese on the mixture.

Final Assembly

  • Repeat the layering process, starting with the remaining chips, the remaining beef and veggie mixture, and finally, the last cup of cheddar cheese.
  • Bake in the preheated oven for approximately 30 minutes, or until the casserole is hot and bubbling.
  • Once out of the oven, let it rest for a few minutes before serving.

Notes

Serve with a dollop of sour cream, a drizzle of salsa, and garnish with fresh cilantro and jalapeño slices for an extra flair.
