Ingredients
  

Wet Ingredients

  • 1/2 cup softened butter Ensure butter is at room temperature
  • 1 cup sugar
  • 2 large eggs
  • 1 very ripe banana, mashed The riper, the better for flavor
  • 1 cup crushed pineapple (don't drain it!) Use canned for best results

Dry Ingredients

  • 2 cups flour All-purpose flour recommended
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Finishing Touch

  • 1/4 cup shredded coconut Optional, omit if not a fan

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream together the softened butter and sugar until light and fluffy.
  • Add the eggs one at a time, beating well after each addition.
  • Stir in the mashed banana and crushed pineapple until fully combined.

Combine Dry Ingredients

  • In a medium bowl, sift together the flour, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Gently fold in the shredded coconut.

Baking

  • Pour the batter into a greased 9x5 inch loaf pan.
  • Bake in the preheated oven for approximately 60 minutes, or until a toothpick inserted into the center comes out clean.

Notes

Store in an airtight container at room temperature for up to 3 days. Refrigerate for longer storage.
