Ingredients
  

Bottom Crust

  • 22 pieces Golden Oreos, crushed
  • 5 tablespoons melted butter

Filling

  • 4 packages 8-ounce packages of cream cheese
  • 1 2/3 cups sugar
  • 1/4 cup cornstarch
  • 1 tablespoon pure vanilla extract
  • 2 large eggs
  • 3/4 cup heavy whipping cream
  • 1 jar Smucker's strawberry ice cream topping

Topping

  • 12 pieces Golden Oreos, crushed (divided) Split into two bowls for topping.
  • 1 1/2 teaspoons softened butter
  • 3 tablespoons strawberry gelatin Use from a small package.

Instructions
 

Preparation

  • Preheat your oven to 350 degrees.
  • Line the outer perimeter of your springform pan with aluminum foil and generously apply butter to the inside to prevent sticking.

Create the Bottom Crust

  • Crush the Golden Oreos and combine them with the melted butter.
  • Press this Oreo and butter mixture into the bottom of your prepared springform pan, creating a solid crust.

Prepare the Cheesecake Filling

  • In a large bowl, place one 8-ounce package of cream cheese, 1/3 cup of sugar, and the cornstarch.
  • Beat with an electric mixer on low until creamy (about 3 minutes), then add the remaining 3 packages of cream cheese.
  • Increase to high and beat in the remaining 1 1/3 cups of sugar, followed by the vanilla extract.
  • Blend in the eggs one at a time, beating well after each addition.
  • Finally, blend in the heavy cream, being careful not to overmix.

Assemble the Cheesecake

  • Gently spoon half of the cheesecake filling onto the prepared crust.
  • Spoon dollops of half of the jar of strawberry topping and swirl with a butter knife.
  • Add the other half of the batter and repeat the strawberry topping process.
  • Bake for approximately 1 hour or until the cheesecake jiggles slightly when shaken.

Prepare the Crumb Topping

  • Pulse remaining Golden Oreos into large crumbs in a small bowl or food processor.
  • Mix with the softened butter until crumbly, setting aside 2 tablespoons.
  • Pour the strawberry gelatin over the crumbs and mix until combined.

Notes

This cheesecake can be topped with various fruits. Store leftovers in the refrigerator for up to a week, or freeze for longer storage. A store-bought Oreo crust can be used for convenience.
