  • 4 cups unsweetened shredded coconut Use unsweetened for better control of sweetness.
  • 1/2 cup melted coconut oil
  • 3/4 cup maple syrup Can substitute with honey or agave syrup.
  • 1 cup your favorite chocolate Dark, milk, or white chocolate can be used.

Preparation

  • Clean your workspace and gather all ingredients and tools.
  • Line an 8 x 8-inch pan with parchment paper.
  • In a food processor, blend the shredded coconut, melted coconut oil, and maple syrup until combined.
  • Press the mixture evenly into the lined pan.
  • Refrigerate for at least an hour to firm up.

Assembly

  • Once set, slice the mixture into bars.
  • Melt the chocolate and dip each bar in it, covering them completely.
  • Lay the chocolate-coated bars on a lined plate and return to the refrigerator.
  • Let the chocolate harden before serving.

Notes

These bars can be served on a dessert platter or gifted. They last up to two weeks in an airtight container in the refrigerator. Consider adding chopped nuts for extra crunch.
