  • 2 3/4 cups all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp salt

Wet Ingredients

  • 1/2 cup whole milk
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 tsp vanilla extract

  • Powdered sugar, for dusting

Preparation

  • In a large mixing bowl, whisk together the flour, cocoa powder, granulated sugar, baking powder, and salt.
  • In a separate bowl, whisk together the whole milk, melted butter, egg, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients, stirring until the mixture forms a sticky dough.
  • On a lightly floured surface, knead the dough for a few minutes until it becomes smooth and elastic.
  • Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour or until it doubles in size.
  • On a lightly floured surface, roll out the dough to a 1/2-inch thickness. Cut the dough into small squares or desired shapes.
  • In a deep pan or fryer, heat vegetable oil to approximately 350F (175C).
  • Carefully drop the beignets into the hot oil, frying them in small batches until they turn golden brown on both sides. Drain on a paper towel-lined plate.
  • Dust the warm beignets with powdered sugar and serve immediately.

Notes

Ensure your ingredients are fresh, the oil is at the correct temperature, and the dough rises adequately for light and airy beignets. For variations, consider adding hints of mint, orange zest, or spices.
