Ingredients
  

Cheesecake Layer

  • 24 oz cream cheese Softened
  • 1 cup sugar
  • 2 tbsp all-purpose flour
  • 3 large eggs Room temperature
  • 1 cup sour cream For richness
  • 1 tbsp vanilla extract

Cake Layer

  • 1 cup unsalted butter Softened
  • 1 cup sugar
  • 3 large egg whites
  • 1 tbsp vanilla extract
  • 1 tbsp almond extract Can be substituted or omitted
  • 2.5 cups all-purpose flour Sifted
  • 1 cup milk Room temperature
  • 1 cup rainbow sprinkles For folding into the batter

Frosting

  • 8 oz cream cheese Softened
  • 4 cups powdered sugar Adjusted to taste
  • 1 tbsp vanilla extract
  • 1 cup rainbow sprinkles For decoration

Instructions
 

Preparation

  • Preheat the oven to 325°F (160°C) and prepare a 9-inch springform pan with parchment paper.
  • In a bowl, whip the cream cheese until smooth and add sugar, flour, eggs, sour cream, and vanilla. Mix until combined for the cheesecake layer.
  • In another bowl, cream together butter and sugar for the cake layer. Add egg whites, vanilla, and almond extracts.
  • Alternate adding dry ingredients and milk mixture to the butter mixture, folding in rainbow sprinkles last.

Baking

  • Pour the cheesecake layer into the prepared pan, then bake using a water bath to prevent cracking for about 60 minutes.
  • While the cheesecake bakes, prepare the cake layer separately and bake it in a separate pan according to package instructions or your recipe.

Frosting and Assembly

  • Make the cream cheese frosting by beating softened cream cheese with powdered sugar and vanilla until smooth.
  • Once the cheesecake is cooled, layer the cheesecake and cake, spreading frosting in between.
  • Finish with a layer of frosting on top and sprinkle with additional rainbow sprinkles for decoration.

Storage

  • Store leftovers in the refrigerator covered to prevent drying out.

Notes

For shortcuts, consider using pre-made cake or cheesecake layers. If pressed for time, store-bought frosting can be used.
