Ingredients
  

Main Ingredients

  • 1 kg beef, cut into chunks Use a tender cut of beef for the best results.
  • 2 large onions, finely chopped
  • 4 cloves garlic, minced
  • 2 inches ginger, grated
  • 400 ml coconut milk
  • 400 g diced tomatoes Canned is fine.
  • 2 tablespoons vegetable oil
  • Fresh coriander for garnish
  • 1 lemon juiced Adds brightness to the curry.

Spices

  • 3 tablespoons curry powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin seeds Toast and grind for better flavor.
  • 1 teaspoon coriander seeds Toast and grind for better flavor.

Instructions
 

Preparing the Beef

  • Season the beef chunks with salt and let them sit for 30 minutes to enhance the flavor.

Toasting the Spices

  • In a dry pan, toast the cumin and coriander seeds until they start to pop. Grind them into a fine powder.

Cooking the Curry

  • Heat the vegetable oil in a large pot over medium heat.
  • Add the onions, garlic, and ginger, sautéing until golden brown.
  • Stir in the toasted spices, curry powder, and turmeric, cooking for a minute until fragrant.
  • Add the beef to the pot, browning it on all sides.
  • Pour in the coconut milk and diced tomatoes. Bring the curry to a boil, then reduce the heat and simmer, covered, for 1.5 hours or until the beef is tender.
  • Finish the curry with a squeeze of lemon juice for a touch of brightness.

Notes

Serve this delectable beef curry over a bed of steaming basmati rice, garnished with fresh coriander. Accompany it with naan bread for a complete meal.
