Ingredients

Steaks and Potatoes

  • 2 pieces ribeye or sirloin steaks, about 1 inch thick
  • 1 lb baby potatoes, halved

Garlic Butter Sauce

  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • fresh herbs (thyme, rosemary, and parsley), finely chopped
  • salt and pepper, to taste
  • red pepper flakes, optional for a spicy kick

Instructions

Cooking the Potatoes

  • In a pot of salted boiling water, cook the potato halves until they are just tender, about 8-10 minutes. Drain and set aside.

Preparing the Steak

  • Season both sides of the steaks generously with salt and pepper.
  • In a large skillet over medium-high heat, sear the steaks for 3-4 minutes on each side for medium-rare, or until desired doneness. Remove and set aside.

Making the Garlic Butter Sauce

  • In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté until fragrant. Stir in the chopped herbs, salt, pepper, and red pepper flakes if using.

Combining the Ingredients

  • Return the steaks and potatoes to the skillet. Spoon the garlic butter sauce over the steaks and potatoes, ensuring they are well-coated.
  • Serve the steak and potatoes hot, garnished with additional fresh herbs if desired.
