Instructions
 

Preparation

  • Season the chicken thighs generously with salt and pepper.
  • In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the chicken thighs, skin-side down, and sear for about 5-7 minutes per side until golden brown. Remove chicken from the pot.

Cooking the Vegetables

  • Add the diced onion, red bell pepper, and green bell pepper to the same pot. Sauté for about 5 minutes until the onions become translucent.
  • Add minced garlic and cook for another minute until fragrant.

Adding Rice and Spices

  • Stir in the long-grain rice, paprika, and saffron threads. Cook for 2-3 minutes, stirring continuously.
  • Pour in chicken broth and drained diced tomatoes, bringing the mixture to a simmer.

Final Cooking

  • Nestle the seared chicken thighs back into the pot, skin-side up.
  • Reduce heat to low, cover the pot, and cook for about 25-30 minutes.
  • If using, add frozen peas during the last 5 minutes of cooking.
  • After cooking, let the dish sit covered for about 5 minutes before serving.

Serving

  • Fluff the rice with a fork, serve the chicken on top, and garnish with fresh parsley or cilantro. Serve with lemon wedges.
