  • 2 lbs boneless, skinless chicken breasts
  • 1 cup honey
  • 1 cup BBQ sauce (your favorite brand) Choose based on personal preference for flavor.
  • 2 tbsp soy sauce
  • 1 tbsp apple cider vinegar
  • 2 cloves garlic, minced
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • to taste Salt and pepper

Preparation

  • Trim any excess fat from the chicken breasts and place them at the bottom of the slow cooker.

Sauce Preparation

  • In a medium mixing bowl, combine the honey, BBQ sauce, soy sauce, apple cider vinegar, minced garlic, onion powder, and smoked paprika. Whisk until smooth.
  • Add salt and pepper to taste, adjusting for sweetness or tanginess as preferred.

Cooking

  • Pour the sauce over the chicken ensuring it is well-coated.
  • Cover the slow cooker and cook on low for 6 hours or high for 3 hours.
  • After cooking, remove the chicken and shred it with two forks.

Finishing Touches

  • Return the shredded chicken to the crockpot, stirring into the remaining sauce.
  • Garnish with chopped green onions or cilantro if desired before serving.

Notes

Avoid overcooking the chicken. Allow shredded chicken to rest in the sauce before serving. To thicken the sauce, whisk cornstarch with water and simmer.
