Ingredients
  

For the filling

  • 1.5 pounds boneless, skinless chicken breasts (or thighs)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups mixed vegetables (carrots, peas, corn, green beans)
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup heavy cream
  • 0.25 cup all-purpose flour

For the topping

  • 1 package (2 crusts) refrigerated pie pastry or crescent roll dough
  • 1 egg beaten (for egg wash, optional)

Instructions
 

Preparation

  • Start by placing the chicken breasts in the bottom of your slow cooker. They should be spread out evenly to allow for even cooking.
  • Layer the diced onion, minced garlic, and mixed vegetables over the chicken.
  • In a separate bowl, whisk together the chicken broth, thyme, rosemary, salt, pepper, and flour until smooth.
  • Pour the broth mixture over the chicken and vegetables in the slow cooker.
  • Cover the slow cooker and cook on low for 6 to 8 hours or on high for 4 hours.
  • Once cooked, remove the chicken from the slow cooker and shred it with two forks. Return the shredded chicken to the pot.
  • Pour in the heavy cream and stir until well combined. Taste and adjust seasoning if necessary.
  • Roll out your pie pastry or crescent roll dough on a floured surface and cut it into squares or rounds.
  • Place the pastry on top of the creamy chicken filling, cutting slits for steam to escape if using a whole sheet.
  • Brush the pie crust with a beaten egg for a golden finish.
  • Cover and continue cooking on high for an additional 30 minutes to 1 hour, until the dough is cooked through and golden brown.
  • Ladle the creamy chicken pot pie into bowls and enjoy while hot.

Notes

Use a meat thermometer to ensure your chicken reaches an internal temperature of 165°F. You can prep ingredients ahead of time and customize the vegetables according to your taste.
