Ingredients
  

For the Chicken Pot Pie Filling

  • 1.5 lbs boneless, skinless chicken breasts (or thighs) Use thighs for a richer flavor.
  • 1 cup carrots, diced
  • 1 cup frozen peas
  • 1 cup chopped celery
  • 1 cup onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream (or a lighter alternative) Almond milk is a healthier replacement.
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons cornstarch (optional, for thickening) Add if you desire a thicker sauce.

For the Biscuit Topping

  • 2 cups all-purpose flour Use whole grain flour for healthier option.
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/4 cup unsalted butter, cold and cubed
  • 3/4 cup milk Use lower-calorie cream alternative if desired.

Instructions
 

Preparation

  • In a large bowl, combine the chicken breasts or thighs, diced carrots, frozen peas, chopped celery, diced onion, and minced garlic. Toss to combine.

Make the Broth Mixture

  • In a separate bowl, mix the chicken broth, heavy cream, thyme, rosemary, salt, and pepper. If you desire a thicker sauce, whisk in the cornstarch until fully dissolved.

Combine in Crockpot

  • Pour the broth mixture over the chicken and vegetables in the crockpot. Ensure the chicken is evenly submerged in the liquid.

Set the Crockpot

  • Cover and set your crockpot on low for 6 to 8 hours or high for 4 hours. Stir occasionally if desired.

Make the Biscuit Topping

  • About 30 minutes before serving, combine the flour, baking powder, and salt in a mixing bowl. Cut the cold butter into the flour mixture until it resembles coarse crumbs.

Add Milk

  • Pour in the milk and stir until just combined. The dough should be slightly sticky.

Add Biscuit Topping to Crockpot

  • After the chicken pot pie filling has cooked, drop spoonfuls of the biscuit dough on top of the filling. Cover and cook on high for an additional 30 minutes.

Serve

  • Once the biscuits are golden brown and cooked through, ladle out generous portions into bowls.

Notes

For added flavor, marinate the chicken or try adding herbs or cheese to the biscuit dough. Store leftovers in an airtight container for up to 4 days.
