Pasta Ingredients

  • 12 oz 12 oz. spaghetti or fettuccine
  • 4 tablespoons 4 tablespoons unsalted butter
  • 6 cloves 6 cloves garlic, minced
  • 1 teaspoon 1 teaspoon red pepper flakes Adjust to taste
  • 1 teaspoon 1 teaspoon Italian seasoning
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 cup 1 cup grated Parmesan cheese
  • ¼ cup ¼ cup fresh parsley, chopped (for garnish)
  • Juice of 1 lemon Juice of 1 lemon (optional, for brightness)

Instructions
 

Cook the Pasta

  • Start by bringing a large pot of salted water to a boil. Add the spaghetti or fettuccine and cook according to the package instructions until al dente. Once cooked, reserve 1 cup of pasta water and then drain the pasta in a colander. Set aside.

Prepare the Garlic Butter

  • In the same pot or a large skillet, melt the unsalted butter over medium heat. Once melted, add the minced garlic. Sauté the garlic for about 2–3 minutes, or until it becomes fragrant and golden, but be careful not to let it burn.

Add Spice and Seasoning

  • Stir in the red pepper flakes and Italian seasoning. Cook for an additional 30 seconds to allow the spices to release their flavors, stirring continuously.

Combine Pasta and Sauce

  • Return the drained pasta to the pot with the garlic butter mixture. Toss the pasta gently to coat it evenly with the butter and spices.

Incorporate Cheese

  • Gradually add the grated Parmesan cheese while tossing the pasta. If the mixture seems dry, add a little reserved pasta water, one tablespoon at a time, until you achieve a creamy consistency.

Season to Taste

  • Taste the pasta and add salt and freshly ground black pepper as needed. If desired, squeeze fresh lemon juice over the dish for an added layer of brightness.

Garnish and Serve

  • Transfer the Spicy Garlic Parmesan Pasta to serving bowls. Garnish with freshly chopped parsley and additional Parmesan cheese if desired. Serve immediately.

Notes

For perfect results, do not overcook the pasta, use fresh garlic, adjust spice levels to taste, reserve pasta water for creaminess, and serve immediately for best texture.
