Ingredients

Main Ingredients

  • 4 pieces boneless, skinless chicken breasts (about 1.5 lbs) Use high-quality, fresh chicken for best results.
  • 2 large onions, thinly sliced Sautéing enhances their sweetness.
  • 2 cloves garlic, minced Adds flavor to the dish.
  • 1 cup low-sodium chicken broth Opt for low-sodium for a healthier option.
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt Adjust to taste.
  • 1 tablespoon cornstarch, mixed with 2 tablespoons water Optional for thickening gravy.
  • Fresh parsley, chopped For garnish.

Instructions

Preparation

  • Start by rinsing the chicken breasts under cold water and patting them dry with paper towels. Cut them into halves if you prefer smaller pieces. Season both sides with salt and pepper.

Sautéing

  • In a skillet over medium heat, add a spoonful of oil. Once hot, add the sliced onions and sauté until they become translucent and begin to caramelize, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.

Combining Ingredients

  • Place the sautéed onion and garlic mixture at the bottom of your slow cooker. Layer the seasoned chicken breasts on top.

Preparing Gravy

  • In a mixing bowl, combine the chicken broth, Worcestershire sauce, dried thyme, onion powder, salt, and pepper. Stir well to combine.

Cooking

  • Pour the gravy mixture evenly over the chicken, ensuring it is well coated.
  • Cover the crockpot with the lid. Set it to cook on low for 6 hours or high for 4 hours.

Thickening Gravy (Optional)

  • If you prefer a thicker gravy, about 30 minutes before serving, mix cornstarch with water. Stir it into the crockpot and cover to let it thicken.

Serving

  • When the cooking time is up, check the internal temperature of the chicken to ensure it reaches 165°F. Serve warm over mashed potatoes, rice, or with crusty bread. Garnish with chopped parsley for a fresh finish.

Notes

Allow the dish to rest for a few minutes before serving to help the flavors meld together. Adjust seasonings as needed.
