  • 1 lb boneless, skinless chicken breasts, diced
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 12 oz fettuccine pasta
  • 1 cup freshly grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Preparation

  • Dice the boneless, skinless chicken breasts into bite-sized pieces and season lightly with salt and pepper.
  • In a large pot or Dutch oven, heat olive oil over medium heat. Add the diced chicken and sauté for about 5-7 minutes until browned and cooked through.
  • Add the minced garlic to the pot and sauté for an additional minute until fragrant.
  • Pour in chicken broth and heavy cream, then bring to a simmer. Add the fettuccine pasta, ensuring it is submerged in the liquid.
  • Cook the pasta for about 10-12 minutes, stirring occasionally until al dente. If the mixture is too thick, add more chicken broth.
  • Remove the pot from heat and stir in the freshly grated Parmesan cheese until melted and creamy.
  • Adjust seasoning with salt and pepper, then serve hot garnished with chopped fresh parsley.

Notes

For best results, use fresh ingredients and be mindful of the pasta cooking time. Consider adding vegetables for a heartier dish.
