  • 1 cup heavy cream

  • 1/2 cup chicken broth
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional) For extra heat
  • Fresh parsley, chopped, for garnish

Instructions
 

Cooking the Pasta

  • Bring a large pot of salted water to a boil. Add the fettuccine pasta and cook according to package instructions until al dente, typically 8-10 minutes.
  • Reserve 1 cup of pasta water, then drain the pasta and set aside.

Preparing the Chicken

  • While the pasta cooks, heat the olive oil in a large skillet over medium-high heat.
  • Season the chicken pieces with Cajun seasoning, salt, and black pepper. Add the seasoned chicken to the skillet and cook until golden brown and cooked through, approximately 5-7 minutes.
  • Ensure the chicken is cooked to an internal temperature of 165°F (75°C).

Sautéing the Garlic

  • Once the chicken is cooked, add the minced garlic to the skillet. Sauté for about 1-2 minutes until fragrant, being careful not to burn the garlic.

Making the Sauce

  • Reduce the heat to medium-low. Pour in the heavy cream and chicken broth, stirring to combine. Allow the mixture to simmer gently for about 3-4 minutes until it begins to thicken slightly.

Incorporating the Cheese

  • Gradually whisk in the grated Parmesan cheese, smoked paprika, and optional cayenne pepper. Continue to stir until the cheese is fully melted and the sauce has a smooth, creamy consistency.

Combining Pasta and Sauce

  • Add the drained fettuccine pasta to the skillet, tossing to coat the noodles evenly in the sauce.
  • If the sauce is too thick, gradually incorporate some reserved pasta water until the desired consistency is achieved.

Garnishing and Serving

  • Taste for seasoning and adjust as needed. Serve the pasta warm, garnished with freshly chopped parsley.
