Teriyaki Chicken Stir Fry

Ingredients
  

For the Chicken

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons vegetable oil (or sesame oil for added flavor) Use sesame oil for enhanced flavor.
  • Salt and pepper, to taste

For the Teriyaki Sauce

  • 1/4 cup soy sauce (low sodium preferred) Low sodium soy sauce is recommended.
  • 2 tablespoons mirin (sweet rice wine)
  • 2 tablespoons brown sugar
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry) Mix well to avoid clumps.
  • 1 teaspoon minced garlic
  • 1 teaspoon minced ginger

For the Vegetables

  • 1 cup broccoli florets
  • 1 number bell pepper, sliced (any color)
  • 1 cup snap peas or snow peas
  • 1 number carrot, sliced thinly
  • 3 number green onions, sliced for garnish
  • Sesame seeds, for garnish (optional) Optional for added flavor and presentation.

Instructions
 

Marinate the Chicken

  • In a large bowl, combine the chicken pieces with a pinch of salt and pepper. Let it marinate for about 10 minutes while you prepare the sauce and vegetables.

Prepare the Teriyaki Sauce

  • In a small bowl, whisk together soy sauce, mirin, brown sugar, garlic, and ginger. In another bowl, mix the cornstarch with water to create a slurry. Combine both mixtures in a pan over medium heat. Stir constantly until the sauce begins to thicken, about 3–4 minutes. Remove from heat and set aside.

Cook the Chicken

  • In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Add the marinated chicken pieces, cooking until golden brown and cooked through, about 5-7 minutes. Make sure to stir frequently to avoid sticking.

Add the Vegetables

  • Once the chicken is cooked, add the broccoli, bell pepper, snap peas, and carrots to the skillet. Stir-fry for about 2-3 minutes until the vegetables are just tender yet still crisp.

Combine with Sauce

  • Pour the teriyaki sauce over the chicken and vegetables. Stir everything to coat well in the sauce. Cook for an additional 2 minutes until everything is heated through and well combined.

Serve

  • Remove from heat. Serve hot over cooked rice or noodles, and garnish with sliced green onions and sesame seeds if desired.

Notes

Use fresh ingredients for best results. Cut chicken and vegetables uniformly for even cooking. Customize your sauce according to taste. Allow marinating time for depth of flavor.
