  • 1 pound boneless, skinless chicken breasts, diced
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 medium bell pepper (red or green), diced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 3 cups chicken broth
  • 8 ounces penne pasta (or your choice of pasta)
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese

Instructions
 

Preparation

  • In a medium bowl, combine the diced chicken with the Cajun seasoning, ensuring each piece is evenly coated.
  • In a large skillet or pot over medium heat, add the olive oil. Once hot, add the seasoned chicken pieces. Cook until browned on all sides, about 5-7 minutes, then transfer the chicken to a plate.
  • In the same skillet, add diced onion and bell pepper. Sauté for about 3-4 minutes until onions are translucent. Add minced garlic and cook for an additional minute.
  • Pour in the undrained diced tomatoes and chicken broth, stirring to combine. Bring to a low boil.
  • Stir in the penne pasta. Reduce the heat to a simmer, cover, and let cook for about 10-12 minutes, stirring occasionally.
  • Once the pasta is al dente, lower the heat and stir in the heavy cream followed by the cooked chicken. Mix until heated through and the sauce has thickened.
  • Add the shredded cheddar cheese and mix until melted. Adjust seasoning with salt and pepper to taste.
  • Garnish with fresh parsley and serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat with added broth to prevent drying. For variations, consider using shrimp or a vegetarian option with chickpeas.
