  • 4 pieces bone-in, skin-on chicken thighs
  • 4 cloves garlic, minced Use fresh garlic for best flavor
  • 1/2 cup grated Parmesan cheese Can substitute with Pecorino Romano or Asiago
  • 1 teaspoon Italian seasoning Experiment with different herbs if desired
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil For rubbing on the chicken
  • 1 tablespoon fresh parsley, chopped For garnish
  • 1 whole lemon, cut into wedges Optional, for serving

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Pat the chicken thighs dry with paper towels.
  • In a small bowl, combine the minced garlic, grated Parmesan cheese, Italian seasoning, salt, and black pepper.
  • Rub the olive oil over the chicken thighs, ensuring they are well-coated.
  • Apply the garlic-Parmesan mixture under the skin of each thigh, distributing it evenly.
  • Place the seasoned chicken thighs skin side up on a baking sheet lined with parchment paper.

Cooking

  • Transfer the baking sheet to the preheated oven and bake for approximately 30 minutes, or until golden brown and internal temperature reaches 165°F (75°C).
  • Remove the chicken from the oven and let it rest for 5 minutes.
  • Garnish with chopped fresh parsley and serve with lemon wedges, if desired.

Notes

For best results, dry chicken thoroughly, use fresh garlic, and check doneness with a meat thermometer. Broil for extra crispiness if desired.
