Ingredients
  

For the Chicken

  • 4 pieces boneless, skinless chicken breasts (about 6 ounces each) Pound to even thickness for consistent cooking.
  • Salt and pepper, to taste Adjust seasoning to personal preference.
  • 1 tablespoon olive oil For cooking the chicken.
  • 1 tablespoon Italian seasoning

For the Sauce

  • 3 tablespoons unsalted butter For flavor and richness in the sauce.
  • 4 cloves garlic, minced Enhances the flavor profile.
  • 1 cup heavy cream Creates a rich and creamy sauce.
  • 1 teaspoon garlic powder
  • 4 ounces cream cheese, softened Will help to thicken the sauce.
  • 1/2 cup grated Parmesan cheese Adds a salty, cheesy element.
  • 2 cups fresh spinach Will wilt down in the sauce.
  • 1/2 cup sun-dried tomatoes, chopped Contributes sweetness and tang.
  • Fresh basil, for garnish (optional) Adds color and flavor.

Instructions
 

Preparation

  • Season the chicken breasts with salt, pepper, and Italian seasoning on both sides.
  • In a large skillet over medium-high heat, heat the olive oil. Once hot, add the chicken breasts and cook for about 5-7 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F). Remove from the skillet and set aside.

Making the Sauce

  • In the same skillet, add the butter and melt over medium heat.
  • Once melted, add the minced garlic and sauté for about 1 minute until fragrant.
  • Pour in the heavy cream, stirring well, and bring the mixture to a gentle simmer.
  • Add the garlic powder and softened cream cheese, whisk until the cream cheese is fully incorporated and the sauce becomes creamy.
  • Stir in the grated Parmesan cheese, allowing it to melt into the sauce.

Finishing the Dish

  • Add the fresh spinach and chopped sun-dried tomatoes to the sauce. Stir until the spinach wilts, about 2-3 minutes.
  • Return the cooked chicken breasts to the skillet, spooning the sauce over each piece.
  • Let them simmer in the sauce for an additional 2-3 minutes to absorb the flavors.

Notes

Pound the chicken for even cooking. Taste sauce to adjust seasoning. Use fresh ingredients for best results. Don’t overcook the chicken. Garnish with fresh basil.
