For the Gravy

  • 4 tablespoons butter (unsalted) Use unsalted butter to control saltiness.
  • 4 tablespoons all-purpose flour This will be used to create the roux.
  • 2 cups chicken or beef broth Use homemade or low-sodium broth for better control of flavor.
  • 1 tablespoon soy sauce Optional, for deeper color and flavor.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper To taste.
  • Optional: drippings from roasted meat For added flavor.

Preparation

  • In a medium saucepan over medium heat, melt the butter. Be careful not to let it brown; you want it to be just melted and beginning to bubble.
  • Once the butter is melted, add the flour. Stir continuously with a whisk for about 1-2 minutes until the mixture thickens and turns a light golden brown.
  • Gradually pour in the broth, whisking constantly to prevent lumps from forming.
  • Add soy sauce, garlic powder, and onion powder. Whisk well to combine.
  • Increase the heat to medium-high and bring the gravy to a gentle boil, stirring frequently.
  • Reduce the heat to low to let it simmer for about 5-10 minutes until it reaches your desired thickness.
  • Taste your gravy and adjust the seasoning with salt and black pepper as desired. Stir in any drippings from roasted meat if using.
  • Remove the gravy from the heat and serve it hot over your favorite dishes.

Notes

For best results, use cold broth when whisking into the roux. Adjust thickness to your liking by adding more broth for thinner gravy or simmering longer for thicker gravy. Can be made in advance and reheated.
