  • 3 cups cooked chicken, shredded Rotisserie chicken works great.
  • 2 cups long-grain white rice, uncooked
  • 1 cup onion, chopped
  • 1 cup frozen peas and carrots mix
  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (10.5 oz) cream of mushroom soup
  • 2 cups chicken broth
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt Adjust to taste.
  • 1 cup shredded cheddar cheese Optional.
  • 2 tablespoons olive oil or butter
  • Fresh parsley for garnish Fresh parsley for garnish Optional.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). This ensures that your casserole cooks evenly and is bubbly by the time it's done.
  • In a large baking dish (about 9x13 inches), drizzle olive oil or melted butter to lightly grease the bottom.
  • In a skillet over medium heat, sauté the chopped onion in olive oil or butter until translucent, about 5 minutes.
  • In a large mixing bowl, combine the shredded chicken, cooked rice, sautéed onions, frozen peas and carrots, cream of chicken soup, cream of mushroom soup, chicken broth, garlic powder, onion powder, paprika, black pepper, and salt. Mix everything well.
  • Pour the mixture into the prepared baking dish, spreading it out evenly. Sprinkle shredded cheddar cheese on top, if using.

Cooking

  • Cover the casserole with aluminum foil and bake for 30 minutes.
  • Remove the foil and continue baking for another 15 minutes, or until the cheese is melted and bubbly and the edges are slightly golden.
  • Remove from the oven and allow it to cool for about 10 minutes. Garnish with fresh parsley, if desired. Serve warm and enjoy.

Notes

Use rotisserie chicken for convenience. Adjust seasoning to your taste. Cover with foil during the first half of baking to retain moisture. Consider adding crushed crackers or fried onions for extra crunch. Allow to rest before serving.
