Ingredients

For the marinade

  • 1/2 cup honey
  • 1/4 cup soy sauce (low sodium recommended)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon sesame oil (optional)

For the chicken

  • 4 pieces bone-in, skin-on chicken thighs
  • Salt and pepper, to taste
  • Fresh chopped parsley or green onions for garnish Optional

Instructions

Preparation

  • In a medium bowl, whisk together the honey, soy sauce, olive oil, minced garlic, grated ginger, and sesame oil (if using).
  • Place the chicken thighs in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring it is well-coated. Seal and refrigerate for at least 30 minutes or up to 2 hours.

Cooking

  • Preheat your oven to 400°F (200°C).
  • In an oven-safe skillet over medium-high heat, add a splash of oil. Remove the chicken from the marinade, season with salt and pepper, and sear skin-side down for about 5-7 minutes.
  • Flip the chicken, pour the remaining marinade into the skillet, and bring to a gentle simmer.
  • Transfer the skillet to the preheated oven and bake for 15-20 minutes until the internal temperature reaches 165°F (74°C).
  • Switch to broil for an extra 2-3 minutes for a caramelized finish, watching closely to avoid burning.

Serving

  • Let the chicken rest for about 5 minutes before serving. Drizzle with the remaining glaze and garnish with parsley or green onions.

Notes

Marinating the chicken enhances the flavor. Use a meat thermometer for perfect cooking. Adjust sweetness or saltiness to taste.
