  • 2 cups cooked and shredded chicken You can use rotisserie chicken for convenience.
  • 1 cup cream cheese Softened
  • 1 cup shredded sharp cheddar cheese
  • 1 cup buffalo sauce Adjust to taste.
  • ½ cup ranch dressing Or blue cheese dressing.
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Optional: chopped green onions or celery For garnish.

Preparation

  • Start by shredding your cooked chicken if you’re not using rotisserie chicken. You can use two forks to easily shred the chicken into bite-sized pieces.
  • In a large bowl, combine the shredded chicken, softened cream cheese, buffalo sauce, ranch dressing, garlic powder, and onion powder. Mix well until all the ingredients are evenly incorporated and the mixture is smooth.
  • Pour the mixture into your slow cooker. Spread it out evenly, ensuring that it fills the cooker.
  • Sprinkle the shredded cheddar cheese evenly over the top of the chicken mixture.
  • Cover your slow cooker and set it to low heat. Allow the dip to cook for about 2 hours, or until everything is heated through and the cheese is melting.
  • Once done, give the dip a good stir to combine everything. If you prefer a thicker dip, let it cook for an additional 15-30 minutes without the lid. Serve warm with tortilla chips, crunchy veggies, or even pita bread.

Notes

Make ahead by preparing the dip a day in advance. Adjust the heat to your preference. You can substitute cream cheese with Greek yogurt for a lighter version or make a vegetarian version by replacing chicken with cauliflower or chickpeas.
